When Life Gives You Charred Veggies…
Let’s be honest—sometimes cooking doesn’t go as planned. But that doesn’t mean it can’t go deliciously right.
This story starts with a simple idea: roast some fresh garden tomatoes, onion, garlic, and herbs to make another small batch of homemade tomato sauce.
It ended with a new favorite salad dressing. 😄
The Plan
Last week, I roasted two quarts of beautiful tomato sauce using produce from our little backyard garden. It turned out so well, I decided to make more.
So, before my first conference call of the day, I cleaned and prepped everything—tomatoes, onion, garlic, peppers, olive oil, fresh herbs. Just like I did last time. I set the oven to 350°F, tossed the veggies in, and got on with my calls.
I could smell the rich, savory aroma while I worked. All was well.
Until it wasn’t.
The Pivot
Just minutes before my second call ended, I took a whiff that made me freeze:
🔥 It didn’t smell roasted anymore… it smelled grilled.
Yup—charred veggies. Not totally ruined, but definitely overdone.
I almost tossed the batch. But then, a thought popped in:
“What if I could turn this into something else?”
The Recipe (Born from a Happy Accident)
Here’s what I did:
Scraped off the overly charred pieces
Tossed the rest in a food processor
Added:
1 tbsp extra virgin olive oil
1 ½ tbsp light mayo
½ cup unsweetened cashew milk
1 tsp honey (optional, or use a sugar-free swap)
Blended again—and like magic, I had a creamy, smoky, grilled tomato dressing that worked beautifully over greens.
I filled a 12 oz. jar and used the extra tablespoon on a salad right away. Delicious!
Kitchen Wins for Diabetics
This little mishap reminded me of something I often tell my clients:
“There’s no such thing as failure—only feedback and flavor.”
